Description
The patties are straightforward to make, give fairly consistent results and are an unbeatable way to introduce young palates to the taste of crab.

2 large eggs
100g fine, dry breadcrumbs
6 spring onions, finely sliced
2 tbsp good-quality soya sauce
1 tbsp Thai fish sauce (nam pla)
1 tsp fresh ginger, finely grated
1 large clove of garlic, crushed
Juice of 1 lime
Salt
Fresh ground white pepper
Plain flour
Vegetable oil
